This savoury mince is a versatile dish that can be made in bulk and used in different dishes. Freeze it for a quick option on a busy night. You can also add some chili for a more spicy dish, basil for an Italian dish or enjoy as is on a slice of toast at breakfast.
Serves 4 – 6
Ingredients:
- 1 Tbsp. Canola or Olive oil
- 1 Medium Onion, peeled and chopped
- 3 Garlic cloves, minced
- ½ cup Basil leaves, fresh OR 2 tsp. Basil, dried
- 4 Carrots, Medium, grated
- 1 Tin Tomato Puree
- 1 Tin Onion and Tomato Mix (I prefer one with zucchini and peppers in as well)
- 1 Tin Lentils
- 2 Tbsp. Tomato sauce
- Salt and pepper to taste
Method:
Heat large frying pan over medium heat. Add oil as soon as pan is heated. Sautee onions and garlic until onions are soft. Add mince to the mixture and stir until almost cooked through. Through all the tinned products and grated carrots into the pan and mix well. Let simmer for 5 – 10 minutes, stirring occasionally. Add tomato sauce, salt and pepper to taste.
Serving suggestions:
- Serve with macaroni for a Napoletana dish
- Add chili or chili flakes for an Arrabbiata dish
- Serve with spaghetti for spaghetti bolognaise
- Pour mince mixture into an ovenproof dish and top off with mash for a cottage pie
- Serve with rice or potatoes
- Serve on toast as an open sandwich
- Serve in a pancake on a winter’s day
- Accompanied vegetables – a green salad complements this dish well
