Serves 4 – 6

1 tin Chickpeas, drained
0.5 tsp. Coriander
1.5 tsp. Cumin
2 cloves Garlic, chopped
2 tbsp. Coriander, fresh, chopped
1/4 cup Parsley, fresh, chopped
1 Carrot, medium, grated
1 Egg
2 – 4 tbsp. Flour
Place chickpeas, spices and garlic in food processer and blend until smooth. (I did not have a food processer and used a blender and then my hands to mix all of the ingredients)
Add the carrot and fresh herbs and mix well
Mix the egg into the mixture
Add the flour, one tablespoon at a time until manageable (should be able to roll or form the mixture without sticking to your hands)
Preheat a pan on medium heat and add oil (1/4 cup).
Cook on both sides until golden brown and cook throughout
Serve with mixed vegetables and tzatziki
Serve in a wrap with Mediterranean or salad veggies
Delicious served as a vegetarian burger or in a pita bread – garnish with leafy vegetables, caramelized onion and tomato relish
