Serves 4 – 6

This roasted vegetable recipe is so easy to make – any variety of vegetables can be used.



1 Onion, medium

125 g Mushrooms, roughly chopped

6 – 8 Carrots, baby, whole


3 – 4 Carrots, medium, roughly chopped

400g Broccoli and Cauliflower mix

4 – 6 Tbsp. Olive oil

Course pepper to taste

Pinch of Paprika

1/2 tsp. Garlic, crushed, dried



  1. Preheat the oven to 200 degrees Celsius on the baking setting.
  2. Toss all the vegetables together in an ovenproof dish, drizzle with oil, sprinkle pepper, paprika and garlic over and mix well.
  3.  Place in the oven for 40 – 45 minutes or until vegetables are tender.
  4. TIP: broccoli and cauliflower florets can dry out quickly – cover ovenproof dish with foil while the vegetables are in the oven.
